Gourmet 25-Minute Caviar Deviled Eggs

Materials
Large eggs - 12
Mayonnaise - 1/2 cup
Crème fraîche - 6 tbsp
Dijon mustard - 2 tsp
Fine sea salt - 1/2 tsp
Black pepper - 1/4 tsp
Shallot - 1 small, minced
Caviar - 1 oz
Fresh chives - for garnish
Steps
  1. Boil eggs for 10 minutes, then transfer to ice water to cool completely
  2. Carefully peel eggs, slice in half lengthwise, and remove yolks to a bowl
  3. Mash yolks with a fork until fine and crumbly
  4. Add mayonnaise, 2 tbsp crème fraîche, mustard, salt, pepper, and shallot, mix until creamy and smooth
  5. Pipe or spoon the yolk mixture back into the egg white halves
  6. Top each egg with a small dollop of remaining crème fraîche, a generous amount of caviar, and garnish with snipped chives
