Baby Potato Boats with Caviar

Materials
Baby potatoes - 24 small
Sour cream - 1/2 cup
Butter - 2 tbsp softened
Fresh chives - 2 tbsp chopped
Salt and pepper - to taste
Caviar - 2 oz
Fresh parsley - for garnish

Steps
- Boil baby potatoes in salted water until tender, about 15 minutes, drain and let cool slightly
- Cut off the top and bottom of each potato so they sit flat on a platter
- Slice each potato in half and use a small spoon to scoop out a small well in the center
- Mix the scooped potato flesh with butter, a bit of sour cream, chives, salt, and pepper
- Spoon or pipe this mixture back into the potato halves if desired, or simply top with fresh sour cream
- Add a generous teaspoon of caviar to each potato boat, garnish with chives and parsley, and serve
