Brillat-Savarin is the most famous French triple cream cow's milk cheese. It has a natural, bloomy rind. It was created c. 1890 as "Gourmets' delight" by the Dubuc family, and later renamed by Cheese-maker Henri Androuët in the 1930s, as a homage to 18th-century French gourmet and political figure Jean Anthelme Brillat-Savarin.
